This one-pan meal is delicious and nutrient-dense, providing 55% of the daily zinc requirement.

INGREDIENTS
2 tsps Extra Virgin Olive Oil
2 Red Onions (diced)
4 Garlic (clove, minced)
400 grams of Minced Beef
4 cups Green Cabbage (thinly sliced)
4 Carrots (medium, julienned)
Sea Salt & Black Pepper (to taste)
1 Lime (juiced)
1/4 cup Coriander (chopped)
2 cups Mushrooms (sliced)
1/4 cup Pepitas
DIRECTIONS
Warm the oil in a large pan over medium heat. Add the onion and sauté for three to four minutes or until soft. Add the garlic and cook for another minute.
Add the beef, breaking it up as it cooks. Cook for five to seven minutes, stirring occasionally. Add the cabbage and carrot to the pan.
Season with salt and pepper and cook for 10 to 12 minutes or until everything is almost cooked, then add the mushrooms and cook for a couple of minutes, until done.
Drizzle with lime juice and top with coriander and pepitas before serving. Enjoy!
NOTES
Leftovers Refrigerate in an airtight container for up to three days.
No Lime Use lemon instead.
